Keto Strawberry Trifle

Cake

Ingredients:

  • ½ cup of melted butter

  • 1 ½ cup of almond flour

  • 2 tablespoon baking powder

  • ½ cup of sweetener

  • 1 cup of liquid egg whites

  • 1 tablespoon of vanilla extract

Directions:

  1. Prepare a microwave safe bowl and add parchment paper and spray release

  2. Add all ingredients to the bowl and mix well

  3. Pour into microwave safe bowl or silicone mold and cook at 2 minutes at a time 

  4. Cook until done (it took us 3.5 minutes)

  5. Allow to cool remove from dish and ice

Strawberries in Whipped Cream Cheese

INGREDIENTS:

  • 4 ounces of cream cheese

  • ⅓ cup of powdered sweetener

  • 1 teaspoon of vanilla extract

  • 1 ½ cups of heavy whipping cream

  • Diced strawberries (about 1.5 cups)

DIRECTIONS:

  1. Add cream cheese and powdered sweetener and mix with paddle attachment

  2. Add heavy cream and vanilla extract

  3. Mix until stiff peaks form

  4. In a separate bowl, combine 1/2 cup of whipped cream cheese into strawberries and preserve the rest for the layers!

Homemade Strawberry Jam

INGREDIENTS:

  • 1-1.5 cups strawberries (destemmed)

  • ¼ cup sweetener

  • Optional: ½ tsp lemon juice

DIRECTIONS:

  1. In a saucepan, turn it on medium heat and add your strawberries. Using a fork or a potato masher, start to mash your strawberries so it can release its juices

  2. After a few mins, your strawberries should turn into a jam-like consistency

  3. Add your sweetener and mix. Cook until it has thickened until your preferred consistency.

  4. Add your lemon juice. Mix and you’re done! At this point, you want to taste your jam to make sure it’s sweet enough for you. Sometimes your strawberries are sweeter so adjust for that.
