Keto Lemon Bars

Crust

Ingredients:

  • 3 tablespoons of softened butter

  • 1 cup almond flour

  • 1/3 cup granulated sweetener 

  • ½ teaspoon of vanilla extract

Fillng

Ingredients:

  • ¼ cup of butter

  • ¼ cup of almond flour 

  • ¼ cup granulated sweetener 

  • ⅓ cup fresh lemon juice 

  • ½ teaspoon of vanilla extract 

  • 2 tablespoons of grated lemon zest

  • 2 eggs

  • 1 egg yolk

  • ¼ teaspoon of xanthan gum

  • 1 teaspoon unflavored gelatin

Directions:

For the crust:

  1. Preheat the oven to 350 degrees.

  2. Melt the butter in the microwave. 

  3. Add the almond flour, sweetener, and lemon zest, vanilla, mix until fully combined.

  4. Press the dough evenly along the bottom and line the pan with parchment paper or foil first, then you can lift them easier.

  5. Bake for 10 minutes.

  6. Remove and cool while you make the filling.

    For the filling:

  7. Melt the butter in a small saucepan on low heat.

  8. Combine the dry ingredients in a separate bowl (almond flour sweetener, xanthan gum, gelatin, lemon zest).

  9. Remove the saucepan from heat and whisk in the eggs and egg yolk and return to the stove over low heat.

  10. Whisk continually until the curd starts to thicken.

  11. Remove from the heat and strain into a small bowl.

  12. Whisk in the dry ingredients for the filling in the saucepan until dissolved and smooth.

  13. Pour the filling over the pre-baked crust and spread out evenly to the edges of the pan.

  14. Bake the bars at 350 for 15 minutes.

  15. Remove and cool.

  16. Sprinkle with Powdered sweetener.
