One Pan Meal - Honey Mustard Chicken Dinner

Ingredients:

Serves 2 to 4:

  • 1 lbs Boneless skinless chicken breasts

  • ¼ cup Dijon mustard

  • ¼ cup Choczero Caramel syrup (discount code: lowcarblove)

  • ½ teaspoon of Salt

  • ½ teaspoon of Apple cider vinegar

  • ½ teaspoon of Paprika

  • 1/2 tsp Freshly ground pepper

  • 3 tbsp Olive oil

  • Bok choy (about 1 -2 cup)

  • ¼ cup of Mushrooms

Directions:

  1. In a small bowl, make the honey-mustard sauce. Combine the Dijon mustard,syrup, 1/2 teaspoon salt, apple cider vinegar and paprika. Stir until smooth.

  2. Lightly season the chicken breasts with 1 teaspoon salt and pepper.

  3. Heat 1 tablespoon olive oil in a large oven proof skillet or braiser over medium high heat. Sear the chicken until golden brown, about 3 minutes each side. Remove from the skillet onto a plate.

  4. Toss the bok choy and mushrooms with the remaining olive oil into the pan and cook til almost done.

  5. Add back in the chicken and honey mustard sauce cook until all well combined.
