Pastry Cream
Ingredients:
2 large egg yolks room temperature
¼ cup powdered sweetener
⅔ cup heavy whipping cream
3 tablespoon room temp butter
1 tablespoon vanilla extract
Pinch xantham gum and salt
Batter
Ingredients:
1 cup almond flour
¼ Lupin or coconut flour
1 teaspoon xantham gum
1 teaspoon baking powder
1 cup water
⅓ cup room temperature butter
1 tablespoon vanilla extract
2 large eggs room temperature
Chocolate Ganache
Ingredients:
6 ounces Choczero sugar free milk or dark chocolate chips
⅔ cup heavy whipping cream
Directions:
In a small bowl whisk together large egg yolks with sweetener
Heat heavy whipping cream, until it begins to just simmer.
Slowly while continuously whisking, add warm cream to the egg yolk mixture.
Return mixture to the pot over medium low heat, until it begins to thicken.
Remove from heat, add in butter, vanilla, and xanthan gum.
Whisk until fully combined.
Place cream in a bowl and cover with plastic wrap.
Set in the fridge until ready to use.
Preheat oven to 375
Prepare a baking sheet with parchment paper.
In a bowl add in both flours, and baking powder.
In a pot add the water and butter.
Heat over medium heat until fully melted.
Add in flour mixture and cook mixture while folding until thick.
Let cool in a bowl.
Add in eggs and vanilla.
Mix until fully incorporated with a hand mixer.
Then add to pipping bag with large tip
Pipe logs.
Bake for 30 to 35 minutes
Let cool
Make ganache.
Heat heavy cream until it just begins to simmer
Pour over chocolate chips.
Let it set for 5 minutes without stirring
Then whisk until silky smooth.
Cover and set aside.
Take pastry cream and add to a piping bag with a filing tip.
Fill clairs.
Dip in melted chocolate ganache.
Allow to cool and set
