Keto Chick Fil A Sandwich

Yields: 6

Buns

Ingredients:

  • 1 1/2 cups almond flour 

  • 4 eggs

  • 1 tablespoon of baking powder 

  • Dash of salt 

  • Optional 1 tablespoon of sweetener 

  • ¼ cup of Shredded cheese cheddar 

  • 2 tablespoon of Sesame seeds

Chicken Marinade

Ingredients:

  • 3 chicken breast halved

  • 1/2 cup pickle juice

  • 1/4 cup water

  • 1/2 cup almond milk 

  • 1 large egg

  • Pickles

Breading

Ingredients:

  • 1 cup lupin flour or ½ cup and ½ cup almond flour or use unflavored protein powder for a crunchier version 

  • 3 Tablespoons powdered sweetener 

  • 1/2 teaspoon paprika

  • 1 teaspoon freshly ground black pepper

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon salt

  • 1 teaspoon baking powder

Sauce

Ingredients:

  • 1/2 cup mayonnaise

  • 1 teaspoon dijon mustard

  • 3 teaspoons yellow mustard

  • 2 teaspoon hickory barbecue sauce

  • 3 Tablespoons alternative honey

  • 1 teaspoon lemon juice

Directions:

  1. Mix all bun ingredients in a bowl. 

  2. Separate dough and mix some with the cheese and the others top with sesame seeds. 

  3. Shape and bake at 350F for 12-15 minutes.

  4. Prepare sauce: Add all ingredients to a bowl and mix well. 

  5. Cover and chill in the fridge. 

  6. Wash and pat dry chicken breast. 

  7. Using a knife, slice breast into halves. 

  8. Add chicken to a bowl and add pickle juice and the water and marinate for an hour or more (overnight even better) 

  9. In a bowl mix almond flour and egg, until combined. 

  10. Set aside. 

  11. Heat oil in a large pan over medium heat. 

  12. Start by discarding pickle hive water mixture. 

  13. Dip one breast into the egg mixture and then into the breading mixture. 

  14. Add to hot oil carefully and fry for 2 to 4 minutes per side. 

  15. Set on a paper towel. 

  16. Once all breast fillets have been cooked. 

  17. Assemble sandwich. 

  18. Enjoy!
