Honey Lime Chicken Meal Prep

Servings: 4

Ingredients:

  • 2-3 bags, cauliflower rice

  • 1.5 lb chicken breasts, cut into chunks

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and pepper to taste

  • 1 tbsp sriracha

  • 2 tbsp Choczero sugar free honey 

  • Juice of 1 lime 

  • 2 tsp soy sauce 

  • 2 cups zucchini

  • 1 cup snap peas 

  • Garnish: Sriracha, sesame seeds, cilantro

Directions:

  1. In a large gallon sized zipper bag, add in all of your ingredients except your cauliflower rice.

  2. Shake until everything is well combined and set aside.

  3. Cook your cauliflower rice. I buy the bagged versions. Cut a slit on the corner and microwave for 2-3 mins. Drain all of the water out of your cauli rice!

  4. On a large skillet, add a tbsp of avocado oil and your drained cauli rice. Cook on medium high heat for 4-5 minutes until light and fluffy. Season with salt and pepper.

  5. Meanwhile, add your marinated chicken and veggies into your airfryer and airfry at 385F for 15 minutes, tossing halfway through. You don’t have to toss it, but your veggies may be extra crispy at the top.

  6. Top with cilantro, sesame seeds, sriracha and enjoy!
