Greek Chicken Meal Prep

Servings: 4

Ingredients:

  • 1 lb chicken breast, diced (2 chicken breasts)

  • ½ red bell pepper, sliced or diced

  • ½ yellow bell pepper, sliced or diced

  • ½ zucchini, sliced and halved

  • ½ red onion ,sliced

  • 2 tbsp avocado oil

  • 1 tbsp Choczero sugar free honey

  • 2 tbsp lemon juice

  • 3 garlic cloves, minced

  • 1 tbsp oregano

  • 1 tsp onion powder 

  • 1 tsp garlic powder

  • ½ tsp salt

  • ½ tsp pepper

  • ¼ cup feta cheese, crumbled

Directions:

  1. Dice your chicken breast into thick cubes. 

  2. Place your chicken, vegetables, avocado oil, seasonings, lemon juice, and garlic into the gallon sized bag or bowl and mix everything together.

  3. You can let it sit in the fridge for 20 minutes or overnight.

  4. When you are ready to cook it, add it to a pan over medium-high heat and cook until the chicken is fully cooked.

  5. If you are meal prepping this dish, you can add it to your meal prep containers with some cauli rice or some salad!
