Ginger Sesame Shrimp Salad

Servings: 4

Ingredients:

  • 1 medium to large mason jar with a screw-on lid

  • 1 cup cooked shrimp (seasoned with salt and pepper)

  • 1/4 cup sliced cherry tomatoes

  • 1/4 cup diced yellow bell pepper

  • ¼ cup persian cucumbers 

  • 1/4 cup shredded red cabbage

  • 1 cup romaine lettuce 

  • 3 tbsp green onion, sliced 

  • 3 tbsp cashews/almonds

Ginger Sesame Dressing:

  • 2 tbsp coconut aminos 

  • ¼ cup avocado oil 

  • 3 tbsp rice wine vinegar (or regular white vinegar)

  • 1 tbsp sesame oil 

  • 1 clove garlic, minced 

  • 3 tbsp Choczero honey

  • 1 tbsp grated ginger (you can do ½ tbsp for less spice)

  • 1 tsp Sriracha 

  • 2 tbsp water 

  • 1 tbsp sesame seeds

Directions:

  1. In a large bowl, make your ginger sesame dressing. Add your ingredients in the bowl, and whisk.

  2. Place everything in a mason jar, with the crunchiest vegetables at the bottom.
