Egg Scramble

Ingredients:

  • 1 tbsp avocado oil

  • 2 eggs, beaten

  • 1 tbsp diced onion

  • 2 tbsp diced tomatoes

  • 2 tbsp mushrooms

  • 1 tbsp diced jalapeños 

  • ¼ full cup spinach

  • ¼ avocado 

  • Salt and pepper to taste

Directions:

  1. In a saute pan, add your avocado oil.

  2. Add your onion, tomatoes, mushrooms and jalapenos in your pan and saute for 1-2 mins until softened and golden brown

  3. Add your beaten egg and cook for 2 mins on each side. Salt and pepper before you flip! Remove and add avocado or any toppings of your choice!
