Egg Scramble
Ingredients:
1 tbsp avocado oil
2 eggs, beaten
1 tbsp diced onion
2 tbsp diced tomatoes
2 tbsp mushrooms
1 tbsp diced jalapeños
¼ full cup spinach
¼ avocado
Salt and pepper to taste
Directions:
In a saute pan, add your avocado oil.
Add your onion, tomatoes, mushrooms and jalapenos in your pan and saute for 1-2 mins until softened and golden brown
Add your beaten egg and cook for 2 mins on each side. Salt and pepper before you flip! Remove and add avocado or any toppings of your choice!
