Chicken Caesar Pasta Salad

Servings: 4

Ingredients:

Salad - 

  • 1 lb chicken breast, butterflied 

  • 1 box Kaizen ziti pasta, cooked

  • 1 pint cherry or grape tomatoes 

  • 1 tbsp crushed chili flakes 

  • 4 cups chopped romaine lettuce 

  • ½ cup shredded carrots 

  • 1 cup sliced persian cucumbers

  • 1 cup mini mozzarella balls 

  • 2 stalks green onion, diced 

  • 2 cups low carb croutons

Caesar Dressing - 

  • 2 garlic cloves, minced

  • 1 tsp anchovy paste or flat anchovies

  • 2 tbsp freshly squeezed lemon juice

  • 1 tsp Dijon mustard 

  • 1 tsp Worcestershire sauce

  • ⅔ cup mayo

  • 1 tablespoon avocado oil 

  • ½ cup freshly grated Parmesan cheese 

  • Salt and pepper to taste 

Directions:

  1. Season your chicken breasts with salt and pepper. 

  2. Airfry your chicken breasts for 15 mins at 400F or pan fry on each side for 4-5 mins on medium high heat. 

  3. In a medium bowl or small blender, blend together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. 

  4. Add the mayonnaise,cheese, salt and pepper and whisk until well combined.

  5. Place in the fridge while you prep the rest of your salad.
