Cauliflower Crust Pizza

Crust:
Ingredients:
1 medium-large (head of cauliflower) or 1 lb of store bought cauliflower rice
1 large egg
1 tsp italian seasoning
1/4 tsp salt
1/4 tsp pepper
1/2 cup shredded mozzarella cheese
¼ cup grated parmesan cheese
Avocado oil spray
Toppings:
½ cup low sugar pizza or marinara sauce
¼ cup mozzarella cheese
20-25 pepperoni slices
Directions:
Preheat the oven to 450 F and line the baking sheet with parchment paper.
If you’re making your own rice, you want to wash your cauliflower, remove the outer leaves, separate into florets and process in a food processor until you get them to the size of regular rice grains.
If you purchased riced cauliflower, microwave your riced cauliflower for 2 mins and transfer to a large bowl lined with a kitchen towel or cheese cloth, and let cool. Using the towel, squeeze as much liquid out as you can.
Add your egg, seasonings, salt, pepper, and cheeses into your cauliflower. Mix until well combined.
Transfer cauliflower pizza dough to your lined baking sheet and flatten with your hands until a thin pizza crust forms. You want it to be about a quarter inch thick.
Bake for 20 minutes. Remove the crust from the oven and add any toppings you’d like.
Bake again until the cheese gets golden brown and bubbly. This took me about 7 minutes. Slice and enjoy!
