2 Ingredient Tortillas

Yields: 4 tortillas

Ingredients:

  • 1 cup greek yogurt

  • 1.5 cups gluten free flour 

  • Optional - Pinch of salt

Directions:

  1. In a large bowl, combine the greek yogurt and flour, stirring well to mix. 

  2. Knead the dough gently a few times, then shape it into a ball. Transfer the dough to a lightly floured surface.

  3. Divide the dough into 4 large or 8 smaller portions. Take one portion and place a sheet of parchment paper on top. Using a rolling pin or tortilla press,, roll it out into a thin, flat circle. 

  4. Heat a non-stick skillet over medium heat and lightly grease it. Place the tortilla in the pan and cook for 2-3 minutes before flipping it to cook for an additional 2 minutes. Continue until all tortillas are cooked.
