100 Calorie Pumpkin Pie

Yields: 8 slices

Ingredients:

  • 1 15oz can pumpkin puree

  • ¾ cup nonfat greek yogurt 

  • ¾ - 1 cup powdered allulose 

  • 2 egg whites (if you aren’t worried about the calories you can use 2 full eggs) 

  • ½ tsp vanilla extract

  • 2 tsp pumpkin pie spice 

  • Optional: 1 tsp xanthan gum or cornstarch (use if you’re using egg whites) 

Directions:

  1. Preheat oven to 350F

  2. In a large bowl, add all of your ingredients together and whip until combined.

  3. Line a pie pan with parchment or spray with avocado oil.

  4. Pour your batter in your prepared baking pan.

  5. Bake for 30-40 minutes until a toothpick comes out clean!
